Ole! Mexican Chicken Muffins



When you bake these Ole! Mexican Chicken Muffins, the soft chicken, sweet corn, gooey cheese, and tangy salsa all come together in a delicious way. Great for a quick snack or meal!

Ingredients:

  • 1 cup cooked chicken, shredded
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green onions
  • 1/4 cup chopped cilantro
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1/2 cup milk
  • 2 eggs

Instructions:

Warm the oven up to 375F 190C and grease a muffin tin

Cooked chicken, corn, salsa, green onions, cilantro, chili powder, cumin, salt, and pepper should all be mixed together in a large bowl

Combine well

Buttermilk, flour, baking powder, and salt should all be mixed together in a different bowl

Melt the butter and add the honey, milk, and eggs to a different bowl

Mix the dry and wet ingredients together until they are just barely mixed

Fill up each muffin tin cup three quarters of the way to the top with batter

Put it in the oven and bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out clean

Let it cool down a bit before you serve
