Pork Tinga Tacos



Indulge in the rich and smoky flavors of Pork Tinga Tacos. This traditional Mexican dish features shredded pork in a chipotle-infused tomato sauce, creating a delicious filling for warm corn tortillas.

Ingredients:

  • 1 lb pork shoulder, cooked and shredded
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 chipotle peppers in adobo sauce, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can 14 oz diced tomatoes
  • Salt and pepper to taste
  • Corn tortillas, for serving
  • Fresh cilantro, chopped, for garnish
  • Crumbled queso fresco, for garnish
  • Lime wedges, for serving

Instructions:

In a large skillet, heat vegetable oil over medium heat

Add chopped onions and cook until softened and translucent

Add minced garlic and cook for an additional 1-2 minutes until fragrant

Stir in the shredded pork, minced chipotle peppers, oregano, cumin, smoked paprika, diced tomatoes with juices, salt, and pepper

Simmer the mixture for 15-20 minutes, allowing the flavors to meld and the sauce to thicken

While the pork tinga simmers, warm the corn tortillas in a dry skillet or microwave

Once the tinga is ready, spoon it onto the warm tortillas

Garnish with chopped cilantro and crumbled queso fresco

Serve Pork Tinga Tacos with lime wedges on the side
