Pfeffernusse - German Spiced Cookies



Pfeffernusse are traditional German spiced cookies, often enjoyed during the holiday season. They are richly flavored with a blend of spices and a hint of almonds, making them a delightful treat.

Ingredients:

  • 2 cups confectioners' sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cardamom
  • 1/2 cup ground almonds
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

In a bowl, whisk together confectioners' sugar, flour, baking soda, black pepper, white pepper, cinnamon, cloves, nutmeg, allspice, and cardamom

Stir in ground almonds

In a separate bowl, mix molasses, honey, softened butter, egg, and vanilla extract until well combined

Gradually add the dry ingredient mixture to the wet mixture and mix until a dough forms

Cover the dough and refrigerate for at least 1 hour

Preheat the oven to 350F 175C

Line a baking sheet with parchment paper

Shape the dough into small balls and place them on the prepared baking sheet

Bake in the preheated oven for about 12-15 minutes or until the cookies are firm to the touch

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely

Once cooled, roll the cookies in additional confectioners' sugar to coat them

Store in an airtight container

The cookies will develop their full flavor after a couple of days
