Paleo Fried Chicken Taco Shell



These tasty and nutritious take on classic tacos are these Paleo Fried Chicken Taco Shells. Serve the crunchy chicken tenders in taco shells made of fresh lettuce leaves, dusted with a flavorful breading of almond and coconut flour. After adding your preferred Paleo toppings, savor a filling, gluten-free dinner!

Ingredients:

  • 1 pound chicken tenders
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • Coconut oil for frying
  • Lettuce leaves for taco shells
  • Sliced tomatoes, onions, and avocado for filling
  • Salsa and guacamole for topping
  • Fresh cilantro leaves for garnish

Instructions:

In a bowl, mix almond flour, coconut flour, paprika, garlic powder, onion powder, dried oregano, sea salt, and black pepper to create the breading mixture

In another bowl, beat the eggs

Dip each chicken tender into the beaten eggs, then coat with the breading mixture, pressing the breading onto the chicken to ensure it sticks

Heat coconut oil in a frying pan over medium-high heat

Carefully place the breaded chicken tenders into the hot oil and fry until they are golden brown and cooked through, about 3-4 minutes per side

Remove the chicken tenders from the oil and place them on a paper towel-lined plate to drain any excess oil

To assemble the tacos, take a lettuce leaf and place a fried chicken tender inside

Add sliced tomatoes, onions, and avocado on top of the chicken

Drizzle with salsa and guacamole, and garnish with fresh cilantro leaves
