Keto Tabouleh Recipe
If you want to make this Keto Tabouleh recipe, you can use grated cauliflower instead of bulgur wheat to make it low-carb. It tastes great, is fresh, and is great for a healthy meal or side dish.
Ingredients:
- 1 head cauliflower, grated
- 2 tomatoes, diced
- 1 cucumber, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions:
Grate the cauliflower and put it in a large bowl
Add the diced tomatoes and cucumber, chopped parsley and mint leaves, finely chopped red onion, and minced garlic
Add lemon juice and olive oil to the bowl and mix them together
Add pepper and salt to taste
Add everything to the bowl and mix it well
Put the dish in the fridge for at least an hour with the lid on to let the flavors mix
