Keto Pesto Chicken Bake



This Keto Pesto Chicken Bake is a simple and flavorful one-tray meal that's perfect for busy weeknights. Tender chicken breasts are smothered in keto-friendly pesto sauce, topped with savory haloumi cheese, and surrounded by juicy cherry tomatoes. It's a satisfying and low-carb dinner option that the whole family will love!

Ingredients:

  • 4 chicken breasts, halved
  • 200g haloumi cheese, sliced
  • 200g cherry tomatoes
  • 1/4 cup keto-friendly pesto sauce
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Instructions:

Start by heating the oven up to 400F 200C

Lay the chicken breasts that have been cut in half across a baking sheet that has been lined with parchment paper

Add salt and pepper to the chicken

Cover every chicken breast with the pesto sauce

Haloumi cheese slices should be put on top of the chicken

Put the cherry tomatoes on the baking sheet around the chicken

Twenty to twenty-five minutes, or until the chicken is cooked through and the cheese is golden brown in a hot oven

If you want, add fresh basil leaves as a garnish before serving
